I've edited my original question for clarity:

Is there a formula I can use to get a DPI mouse setting value I can use to approximate a given relative zoom sensitivity in hipfire? It does not need to work out to the same CM/360. I'm just ignorant and I don't totally understand how the change in FOV factors into this.

I thought I had this figured out, but turns out I was convert Widow/Ana to Widow/Ana, when what I needed to do was convert Widow/Ana to Hipfire. I could still use help here.

 

Edit: I'm beginning to think what I'm trying to do may not be possible without changing in game sensitivity, because of the FOV change. Please correct me if there's something I'm not thinking of here.

Update:

So by manually lowering the DPI in hip fire, I was able to find an approximate DPI (about a centimeter and some change off from the relative zoom 360 distance): 350.

272.996 cm however is deathly slow at a full field of view. It's almost like I'm looking for a relative hipfire for a zoom sensitivity, if that makes sense. This is where my math and understanding starts to break down a little bit. And I'm not totally sure if the DPI number I'm looking for doesn't exist. Any thoughts?

In the end, I think I've decided this isn't as clever of an idea as I thought it was. I'll let you know if my mileage changes.

It is actually clever for games like BF3 that doesn't have separate sensitivity for aims. I made a quick-shift macro bound to right mouse button back when I played it, so the zoom sensitivity was to my liking :)

@DPI Wizard well, I was mostly just messing with the idea of the 38 (ish) dogma of relative sensitivity that gets passed around in the OW community (and that the calculator largely confirms).  I was trying lower relative aim sensitivities to see how that affected my Widow Maker experience and then got the bright idea that maybe McCree and Hanzo could benefit from being able to toggle a lower DPI optionally when tracking.

But what I found this resulted in was 3 different sensitivity experiences I had to keep track of, and that maybe it wasn't going to be as helpful as I'd hoped. My sens is so low.. if I go lower I start losing the ability to execute 180s and translate my sens settings into other games that aren't as hardcore about their configuration options. 

Basically I have a very confused arm right now. :P
