I think I figured it out. I had to enable the MDV setting and it feels better now

Yeah, this game has like 11 different settings that affects the scopes, so everything needs to be configured as in the calculation output and game notes.

do you know if changing the calibration on sights and scops in the gunsmith area will alter real sensitivity?

You mean here? (sorry, only got a chinese screenshot handy)

If so yes, altering the 0.25 zoom factor affects the aim, which is why there are so many in the calculator.
