Is it possible to unlock the FoV option somehow? Flawless widescreen has an FoV slider for this game.

Use flawless widescreen, link in the FOV notes.

You do need to disable smoothing by following the instruction in the notes. Other than that it should be enough to just enter your CSGO config and select this game as output.

Ideally you should also use Flawless Widescreen so you can match the FOV to CSGO, which means setting it to 18%.
